Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt & pepper to taste
For the Salad
- 1 large head romaine lettuce, chopped
- 1 cup croutons (homemade or store-bought)
- ½ cup freshly grated Parmesan cheese
- Fresh cracked black pepper (optional garnish)
For the Caesar Dressing (Homemade Optional)
- ½ cup mayonnaise
- 2 tbsp lemon juice
- 2 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- 1 clove garlic, minced
- ¼ cup grated Parmesan cheese
- Salt & pepper to taste
(Or use your favorite bottled Caesar dressing.)
Directions
1. Season & Cook the Chicken
- Pat chicken breasts dry and season both sides with garlic powder, onion powder, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 5–6 minutes per side, or until golden brown and cooked through (165°F internal temperature).
- Remove from heat, let rest 5 minutes, then slice into strips.
2. Make the Caesar Dressing (Optional)
- In a small bowl, whisk together mayonnaise, lemon juice, Dijon, Worcestershire, garlic, and Parmesan.
- Taste and adjust salt and pepper as needed.
- Refrigerate until ready to use.
3. Build the Salad
- Add chopped romaine to a large mixing bowl.
- Toss with Caesar dressing until lettuce is lightly coated.
- Add croutons and Parmesan, tossing gently.
- Top with sliced chicken.
4. Serve with Love
- Transfer salad to plates or a serving platter.
- Add extra Parmesan or black pepper for a little flair.
- Serve immediately for freshest crunch.
